    Key terms and definitions to help you understand the carnivore diet, animal-based nutrition, and related concepts.

    A

    Adaptation Phase

    The 2-6 week period when your body transitions from burning glucose to burning fat as its primary fuel source. Common symptoms include fatigue, headaches, and cravings, which typically resolve as metabolic adaptation completes.

    Animal-Based Diet

    A dietary approach centered on animal products — meat, fish, eggs, and dairy — with minimal or no plant foods. Slightly broader than strict carnivore, sometimes including honey and select fruits.

    Autophagy

    A cellular recycling process where the body breaks down and removes damaged cells and proteins. Fasting and low-carb diets like carnivore may promote autophagy, which is linked to longevity and disease prevention.

    B

    Bioavailability

    The proportion of a nutrient that is absorbed and utilized by the body. Animal-sourced nutrients like heme iron, zinc, and B12 have significantly higher bioavailability compared to plant-sourced equivalents.

    Bone Marrow

    The soft, fatty tissue inside bones, prized for its rich content of fat-soluble vitamins, collagen, and healthy fats. A traditional nutrient-dense food enjoyed roasted or in bone broth.

    C

    Carnivore Diet

    An elimination diet consisting exclusively of animal products — primarily meat, fish, eggs, and some dairy. It removes all plant foods including fruits, vegetables, grains, and legumes.

    Carnivore Flu

    Temporary flu-like symptoms — fatigue, headaches, irritability, and brain fog — experienced during the first 1-3 weeks of transitioning to a carnivore diet as the body adapts to burning fat instead of glucose.

    CLA (Conjugated Linoleic Acid)

    A naturally occurring fatty acid found primarily in grass-fed beef and dairy. Research suggests CLA may support body composition, immune function, and metabolic health.

    Collagen

    The most abundant protein in the body, found in connective tissue, skin, bones, and joints. Rich dietary sources include bone broth, skin-on meats, and organ meats.

    E

    Electrolytes

    Essential minerals — sodium, potassium, and magnesium — that regulate hydration, nerve function, and muscle contractions. Electrolyte needs often increase during the adaptation phase of a carnivore diet due to lower insulin levels and increased water excretion.

    Elimination Diet

    A dietary approach that removes potentially problematic foods to identify sensitivities. The carnivore diet is one of the most restrictive elimination diets, removing all plant compounds.

    F

    Fat Adaptation

    The metabolic state where your body efficiently burns fat for fuel instead of relying primarily on glucose. This typically occurs after several weeks on a very low-carb or carnivore diet.

    G

    Gluconeogenesis

    The metabolic process where the liver creates glucose from non-carbohydrate sources like protein and glycerol. This ensures adequate blood sugar even without dietary carbohydrates.

    Grass-Fed / Grass-Finished

    Meat from cattle raised on pasture. 'Grass-fed' means the animal ate grass at some point; 'grass-finished' means it was never switched to grain. Grass-finished beef tends to have higher omega-3s, CLA, and fat-soluble vitamins.

    H

    Heme Iron

    A form of iron found exclusively in animal foods (meat, fish, poultry) that is absorbed 2-3 times more efficiently than non-heme iron from plant sources.

    Histamine Intolerance

    A condition where the body cannot break down histamine efficiently, causing symptoms like headaches, hives, and digestive issues. Some carnivore dieters focus on fresh meats and avoid aged/fermented products to manage histamine levels.

    I

    Inflammation

    The body's immune response to injury or irritants. Chronic low-grade inflammation is linked to many modern diseases. Many carnivore dieters report reduced inflammation markers after eliminating plant foods and seed oils.

    Insulin Resistance

    A condition where cells become less responsive to insulin, leading to elevated blood sugar and increased fat storage. Very low-carb diets like carnivore can improve insulin sensitivity over time.

    K

    Ketosis

    A metabolic state where the body produces ketone bodies from fat to use as fuel. The carnivore diet, being very low in carbohydrates, typically induces nutritional ketosis.

    L

    LCHF (Low-Carb High-Fat)

    A dietary framework that minimizes carbohydrate intake while emphasizing healthy fats as the primary energy source. The carnivore diet is an extreme form of LCHF that eliminates all plant-based carbohydrates.

    Lectins

    Plant proteins that can bind to cell membranes and may cause digestive issues in some people. Found in grains, legumes, and nightshade vegetables — all eliminated on the carnivore diet.

    N

    Nose-to-Tail Eating

    The practice of consuming all parts of an animal, including organ meats (liver, heart, kidney), bone marrow, and connective tissue. This maximizes nutrient intake and minimizes waste.

    O

    Omega-3 Fatty Acids

    Essential polyunsaturated fats — EPA and DHA — found abundantly in fatty fish, shellfish, and grass-fed meat. They support brain health, reduce inflammation, and improve cardiovascular markers.

    Organ Meats

    Nutrient-dense internal organs of animals, including liver, heart, kidney, brain, and sweetbreads. Often called 'nature's multivitamin' due to their concentrated vitamin and mineral content.

    Oxalates

    Naturally occurring compounds in many plant foods (spinach, nuts, chocolate) that can bind to minerals and contribute to kidney stones. Eliminated entirely on the carnivore diet.

    P

    PKD (Paleolithic Ketogenic Diet)

    A clinical protocol developed by Paleomedicina Hungary that emphasizes a 2:1 fat-to-protein ratio with organ meats and eliminates dairy. Used therapeutically for autoimmune and chronic conditions.

    Protein Leverage Hypothesis

    The theory that humans eat until protein needs are met. Because processed foods are low in protein, people overconsume calories. High-protein diets like carnivore may naturally regulate appetite.

    PUFA (Polyunsaturated Fatty Acid)

    A type of fat with multiple double bonds in its carbon chain. While omega-3 PUFAs are beneficial, excess omega-6 PUFAs from seed oils are considered pro-inflammatory by many in the carnivore community.

    R

    Rendered Fat

    Fat that has been melted and strained from animal tissue through slow heating. Common rendered fats include tallow (beef), lard (pork), and duck fat — all staple cooking fats on the carnivore diet.

    Ruminant Meat

    Meat from grass-eating animals with multi-chambered stomachs — beef, lamb, bison, venison, and goat. Often considered the optimal meat source for the carnivore diet due to superior fatty acid profiles.

    S

    Saturated Fat

    A type of fat with no double bonds in the fatty acid chain, found abundantly in animal products. The carnivore diet is high in saturated fat, which serves as a primary energy source.

    Seed Oils

    Industrially processed vegetable oils extracted from seeds — canola, soybean, sunflower, corn, and cottonseed. Widely avoided in the carnivore community due to high omega-6 content and oxidation concerns.

    Suet

    The hard, raw fat found around the kidneys and loins of cattle and sheep. It has a high melting point and is used to make tallow. Prized for cooking and as a dense energy source on the carnivore diet.

    T

    Tallow

    Rendered beef or mutton fat used for cooking. Prized in the carnivore community for its high smoke point, stability, and neutral flavor.

    V

    Vitamin K2

    A fat-soluble vitamin found in animal products — especially liver, egg yolks, and grass-fed dairy — that directs calcium into bones and teeth and away from arteries. Works synergistically with vitamins A and D.

    Z

    Zero-Carb

    A colloquial term for the carnivore diet, though technically animal foods contain trace carbohydrates (e.g., glycogen in fresh meat, lactose in dairy). The term emphasizes the absence of dietary plant carbohydrates.
