Braised Beef Tongue
Melt-in-your-mouth tender beef tongue slow-braised to perfection. Once peeled, this delicacy has a rich, beefy flavor and silky texture.
Instructions
- 1
Rinse beef tongue thoroughly under cold water. Place in a large pot and cover with cold water. Bring to a boil and drain (this removes impurities).
- 2
Return tongue to pot with bone broth, salt, and bay leaves. Add water to cover if needed.
- 3
Bring to a simmer, cover, and braise for 2.5-3 hours until very tender when pierced with a fork.
- 4
Remove tongue and let cool slightly. Peel off the outer skin while still warm - it should slip off easily.
- 5
Slice against the grain and serve with reduced braising liquid or simply with salt.
