Instructions

Season the steak generously with salt and place on a wire rack over a baking sheet. Refrigerate uncovered for 1-24 hours.

Preheat oven to 250°F. Bake steak until internal temperature reaches 115°F, about 30-40 minutes.

Heat a cast iron skillet over high heat until smoking. Add butter.

Sear the steak for 45-60 seconds per side until a deep brown crust forms.

Add rosemary and baste with butter. Rest 5 minutes before slicing against the grain.
