      Season short ribs generously with salt on all sides. Let sit at room temperature for 1 hour.

      Preheat oven to 275°F. Heat beef tallow in a Dutch oven over high heat.

      Sear short ribs on all sides until deeply browned, about 3-4 minutes per side.

      Add bone broth to the pot. Cover with a tight-fitting lid.

      Braise in the oven for 3.5-4 hours until meat is fork-tender and falling off the bone.

      Remove lid for the last 30 minutes to reduce the liquid into a rich sauce.
